chicken OR rice?

How do you define a good chicken rice? By how fragrance is the rice or how juicy is the chicken? For me ..
#3 .. chicken ( i only take roasted chicken, don't like steamed ones )
#2 .. rice ( i think this is quite important )
#1 .. the chili sauce

Yes, to me , the chili sauce is the main element for a good chicken rice. I can eat the whole plate of rice just with the chili, with or without chicken. :)

Same thing for nasi lemak. I don't care how creamy your rice is, or how good is your rendang or curry, but if you sambal is not up to my taste, the .. FAIL!

So, chicken or rice for you?

  3. Wow! Chicken rice! I'm very particular about chicken rice of all food.

    The metrics I use to consider a good plate of chicken rice are:

    1. The steam chicken breast must be tender, juicy and not chewy like rubber. Chicken breast is the part that is harder to get right, so tasting the chicken breast has been become an indicator for me.

    2. The rice must be fragrant and does not appear in chunks. It should not be too dry nor too wet.

    3. The chili paste must not be too spicy or else it will overcome the taste of the chicken and rice. It must have enough vinegar so the spicy and sour sensation are balanced. It's best that the chili paste does not contain the seeds.

    4. One last important thing that many don't really care about is the ginger paste. The ginger paste must be juicy, fragrant and not too spicy. The juice in the paste should be the juice fromt the ginger itself not water or vinegar or anything else.

  8. I use to love it but i think i had too much of it already. Phobia. Anyway as long as the chicken is not too chicken and the chili is sour enough then i'll love it.
